
The garlic is very important in our nourishment. You
can use it in all kind of cooked dishes: stews, fishes,
vegetables and in the flavouring of sauces.
Some of the typical Spanish dishes in which the garlic
is used are:
· the “ajo blanco”, a cold soup typical
from Malaga, in which you can put fruits such as apple,
grapes, etc.
· “ajoarriero”, sauce made with different
products such as oil, garlic, onion, pepper, tomato,
paprika, etc. that you can use with codfish, chicken
and so one
· “all i pebre”, sauce made with
oil, garlic, paprika and hot pepper that is specially
suitable for eels which are cooked with water in the
Albufera area
· “ajillo”, a sauce used some years
ago in the typical Spanish bars
· “ajada gallega” a red refried sauce
- because of the hot pepper that it has-, cooked with
a bit of water which is very suitable for the fish cookings.
